Why Simplifying Meal Prep Is the Key to Consistency

When I first decided to “get serious” about eating healthy, I thought the answer was meal prep.

So I ordered a big binder from a program called Precision Nutrition. It came with a set of recipes, a way to calculate your macros, and all the rules about how to do it "right".

And with all the confidence of a college student who had barely cooked anything beyond frozen chicken nuggets and boxed mac & cheese…I decided to prep every single meal for the week.

Breakfast, lunch, and dinner.

All in one marathon cooking session.

I’ll never forget standing in my tiny kitchen at 2 a.m., exhausted, trying to finish a recipe for split pea soup.

👉 A soup I’d never made before (to be real, I had never made soup period at that point)

👉 Using an ingredient I didn’t even know existed the week before.

👉 That I wasn’t even all that excited to eat.

The next day, I lugged a giant cooler bag of food across New York City while commuting from Queens to Manhattan. And when it was time for lunch? I ate that soup cold, standing in a corner of campus, because I couldn’t find a microwave anywhere close by.

Instead of feeling healthy and empowered, I felt weighed down, overwhelmed, and honestly…resentful.

And yet, I kept repeating that cycle for years.

Because I believed the only way to be “healthy” was to follow someone else’s plan, even when it didn’t fit my life at all.

But here’s what I eventually learned:
